gnocchi with spinach

500g spinach, cooked, drained & chopped
2 eggs
250g ricotta cheese
70 – 100g Parmesan cheese, grated
½ teaspoon nutmeg, grated
aprox. 3 tablespoons plain flour 
salt & pepper

combine all of the ingredients in a large mixing bowl

dust with additional flour until the dough no longer sticks to your hand

make long roll from the dough and dust again with semolina

cut into pieces

then place them into salted boiling water for aprox. 5 minutes until they float to the surface

remove from water and drain them well

pour extra virgin olive oil over the gnocchi & freshly grated Parmesan cheese

or serve them with simply tomato sauce & basil
